You can't do a harem end. If you like anyone other than Melody then you need to go down Melody's friendship route and not romance her at all. If you don't get her score up enough you'll have a dead end when Bethany show up in town though so you can't just ignore Melody entirely and only focus on someone like Rebecca.
You can't. No romancing Amy if you wanna date Mel.
Rebecca is best girl but you can feel free to have that opinion if you wish.
